Consumer trends hold promise for food industry, farmers

Consumers are confused about food. In fact, research by the International Food Information Council (IFIC) has shown that 80% of consumer believe the information they receive is often very conflicting, and that leads them to doubt the food choices they make for themselves and their family.

Still, nearly 70% of consumers are very or somewhat confident in the food supply overall. They also are relatively accepting of food produced using technology.

Dr. Tamika Sims, director of food technology communications with IFIC, shared her insight on food industry trends during the Bayer Forum in Orlando, Fla.

She talked about consumer preferences and perceptions, food labeling, food safety and the recent EAT-Lancet report, which is looking to drive nutritional guidelines toward a significant reduction in meat consumption.
