This week, Chicago was home to IFT18. It is an annual event for the Institute of Food Technologists and includes one of the world’s largest food expos.

IFT18 also is a great place to pick up on new trends and to catch a glimpse at what the future may hold for the food industry, both in terms of opportunities and challenges.

Among those topics that were top of mind at this year’s event and which we found of particular interest, were the Clean Label movement and the growing emergence of non-animal based protein alternatives, including Clean Meat.
