Steven Ricke, Ph.D.
Director of Meat Science and Animal Biologics Discovery (MSABD) at the University of Wisconsin-Madison
Steven Ricke received his B.S. and M.S. from the Univ. of Illinois and Ph.D. from the Univ. of Wisconsin. Ricke was a USDA-ARS postdoctorate in the Microbiology Department at North Carolina State Univ. then joined Texas A&M Univ. as a professor in the Poultry Science Dept. In 2005, he became the first holder of the new Donald “Buddy” Wray Endowed Chair in Food Safety and Director of the Center for Food Safety at the University of Arkansas (UA). He was honored as a Texas Agricultural Experiment Station Faculty Fellow, and the Division of Agriculture - UA John White Outstanding Research Award. He served as co-founder and former President of the Arkansas Association of Food Protection (AAFP) and named as an AAFP and a PSA Fellow. On October 5, Ricke was appointed as the director of the Meat Science and Animal Biologics Discovery (MSABD) program at the University of Wisconsin-Madison’s College of Agricultural and Life Sciences.
Ruurd Zijlstra, Ph.D.

Ruurd Zijlstra is professor at the Department of Agricultural, Food and Nutritional Science at University of Alberta, Edmonton, Canada. He was born and raised in The Netherlands where he completed a M.S. at Wageningen University. In 1996, he completed a Ph.D. at the University of Illinois and was first for eight years at Prairie Swine Centre in Saskatoon, Canada as Research Scientist – Nutrition. He has produced 161 scientific papers and 12 book chapters on nutrition topics. His current research program is focused on unique aspects of starch and fiber nutrition, nutritional quality of co-products in pigs, and feed quality evaluation techniques. He received the 2018 Nonruminant Nutrition Award of the American Society of Animal Science – American Feed Industry Association.
Jon Bergstrom, Ph.D.

Jon Bergstrom earned a B.S. in Agricultural Studies/Farm Operations from Iowa State University in 1992. After working on a swine farm in Missouri, he attended graduate school at Kansas State University and earned a M.S. in Swine Nutrition in 1996. He then worked as a Swine Research Coordinator for Seaboard Farms before becoming a Swine Nutritionist and Consultant at Kerber Milling Company. Jon returned to Kansas State University in 2007, where he managed the Swine Research Lab and completed a Ph.D. in Swine Nutrition and Production before joining DSM in July 2011. Jon has over 20 scientific articles published in peer-reviewed journals and over 160 scientific abstracts and extension publications. Jon has received several awards, including the Midwest Section ASAS/ADSA Outstanding Early Career Agribusiness Award in 2018, the ASAS Foundation and Dr. Tim S. Stahly Outstanding Swine Nutrition Midwest Graduate Student Award in 2011, and the ASAS Midwest Section Animal Science Young Scholar Award in 2011.
