Penn State Extension will offer the Preventive Controls for Human Food – Dairy Foods Processing short course Oct. 29-31, at the Erickson Food Science Building on Penn State’s University Park campus. This course is designed for people in the dairy processing industry who need Preventive Controls Qualified Individual — or PCQI — training.

The three-day course follows the Food Safety Preventive Controls Alliance (FSPCA) curriculum for PCQI training on developing, implementing and maintaining a food safety plan. This course includes additional lectures on dairy hazards and the Pasteurized Milk Ordinance appendices K and T.

Dairy foods teaching models will be used during breakout sessions during which participants will work to develop different elements of a food safety plan. Participants may work on their own plans during breakout sessions with the approval of their company and the instructor.

Participants will receive a PCQI certificate from the FSPCA following the successful completion of the course. The agenda, travel information and registration link are available on the Preventive Controls for Human Food – Dairy Food Processing website.
