Using its mushroom technology, MycoTechnology Inc. has announced a new process that removes the gluten from wheat.

USING its mushroom technology, MycoTechnology Inc. has announced a new process that removes the gluten from wheat.

The process works by harnessing the purification properties of mushrooms that are trained to consume the protein gluten.

According to the company, independent, third-party testing has confirmed that certain mushroom strains were able to remove 99.9998% of the total gluten content.
