The hog market has certainly been an interesting one this spring, according to Steve Meyer, vice president of pork analysis at EMI analytics.
Per capita consumption typically bottoms out in summer and increases in the fall, but Meyer said the U.S. is currently running above last year’s number on per capita consumption.
