IN my long and strangely checkered career in marketing, I've had a chance to look in on quite a few markets — toys and games, retailing, food safety, baking, frozen foods, meat and poultry from "gate to plate" — and the most hide-bound of them all is meat. To narrow it down more, it's beef; to be agonizingly specific, it's cattle ranching.
